Fra Diavolo Shrimp


Yesterday I made this Yummy dish called Fra Diavolo Shrimp on Taste & Tell It was really good! I had three friends over, Courtney, Kayla and Heidi and and they all loved it! It for sure is going to be a dish that will be a regular for me! I'll make it for sure when my parents get back as well as for Jordan! I Have had a crazy last week, plus didn't have any interenet service in cali so I was MIA for a while, but i'm back! I'll get some pics up from thanksgiving soon! It was a really fun week that went by way to fast! I've been doing really good this week as well starting the whole diet thing! I cleaned out the whole fridge and went shopping to get some healthy stuff and I've been feeling great! Plus I have the week to myself to get on a roll! well I gotta get to work but try this! Its awesome! Even with some toasted sourdough bread! YUM!

*Promise*

Wow, Life has been so extremely overwhelming, exciting, slow, crazy, fun, boring and perfect all at the same time I don't even know where to start! One I feel bad for not writing sooner. So many things have been going on in my personal life I just didn't have time to even think about getting on. That seems to happen a lot to people in the blogging world I've noticed!
Well, Some brand spankin new GREAT news! I have been searching for a job, not really hard, but hard enough cause i'm barely getting enough to pay for my cell phone bill working at my dads that it started to become a one night staying up 5 extra hours to email every add I found! And guess what, I think I just scored an AWESOME job! ;-)
There's a family from the UK that is moving to Rexburg and the husband is a Captian of a sea company and the mother is a art seller and is opening her own business here. They have 2 girls i'll be taking care of, 3 yr and 7yr old! They sound like a crazy busy family to work for, but at the same time i'm ready for an adventure, and this sounds like it. It may take over more time then I am planning, but since they are in rexburg, it doesnt make me have to move or be gone from family and boyfriend and animals! Hopefully they will be a lot of fun, and i'll learn things from them and they'll learn from me. Who know's maybe it will help me to become an even greater mom and homemaker! YAY! I'll keep ya posted on how that goes, I won't start till the end of this month though so I have a few weeks still to just have fun! Oh by the way, i'll be making really good mula! I'll be able to save and make my future even brighter!
Speaking of being fun, I'll have to start reading all my moms books and magazines and buying some to find all the cool things me and the girls can do together! I feel like I just scored a GREAT job that hopefully, I'm praying with be a great job and experience for me and won't interfere though with relationships and stuff!
So, to the promise part of my post.....I have felt that I have made SOO many promises to myself, others, and heavenly father, that its time to REALLY live those promises. I've seen so many break so many of them and it breaks my heart, just as much as my heart breaks when I myself break one. So I thought, what better then to write some of my promises down here so that all of you can know, and that I can be better at keeping them! Mexi Lasagna Casserole and a Full Day!

So, Today was quite full actually! I woke up, went out and worked with the horses for a bit, gave buddy his medicine and had a GREAT helper.....lol.....Then I went back to my dad's shop and help work for a while, went to lunch with my mom, worked for a little while longer, went grocery shopping to go and get stuff for dinner as well as i'm making lunch for all the guys tomorrow at work, then went to go get my hair cut and oh it looks and feels great! No more split ends! Then went back to pick up my mom and head to finish this amazing Mexican Lasagna casserole! It was so fun to make! I just LOVE making mexican food. That may be because I LOVE mexican food...I could seriously probably eat it EVERYDAY! Anyways, back to my day, so I finished this and had my parents and Seth and Kristin over to eat it and there were still many leftovers! Then we had some buttermilk and some oranges and well, every week up at the ranch we made muffins and these are one of the few kinds I made that are on Pioneer Woman's blog so I made those for dessert/breakfast in the morning! Oh and then after we ate we went and gave buddy his medicine again and walked the girls around for a while and know I'm home writing this, waiting for the chicken in the crockpot for in the morning to finish and then well, I'm on my way to bed! YAY! Well enjoy! See ya all tomorrow! I'm making my famous GOLDEN Enchilada's but with a different twist this time! We'll see if the boys like it! :-)

Mexican Lasagna Casserole

1 bag of corn tortilla's

5-6 cups shredded chicken

2 cans cream of chicken soup

1/2 can water

2 cans green chilies

1 med can sliced olives

2 bags shredded mexican cheese

1 can chopped jalapeno peppers (or fresh)

1 large onion, chopped

1 large bell pepper, chopped

1 lg. tomatoe, chopped

salt, pepper, chili powder, cumin

Garnish: Extra olives, cilantro, tomatoes, sour cream , salsa

1) Heat soup, water, green chilies and canned jalapeno's (if used fresh saute' with onion mixture)

2) Saute' onion, olives, bell pepper, and tomatoe's (and jalapeno) and add seasonings

3) Mix onion mixture together with shredded chicken

4) Layer the bottom of a 9x12 baking dish with corn tortilla's

5) Top with chicken mixture and 1/2 the soup mixture then sprinkle cheese on top.

6) layer one more time sprinkling cheese on top.

7) Bake at 350 degrees for 30 min.

8) Garnish when serving



Delicious Orange Muffins with Brown Sugar Glaze

(Pioneer Woman)

1 cup sugar

1 cup butter, softened

2 eggs

1 cup buttermilk (if you don't have buttermilk, add 1 TBSP white vinegar to just under 1 c. milk)

1 tsp. baking soda

2 cups sifted flour

Grated rid of 2 oranges

Juice of 2 oranges

1 cup brown sugar

Preheat oven to 375 degrees. Cream butter and sugar together. Add eggs and mix well. Dissolve baking soda in buttermilk; pour in mixing bowl. Add 2 cups flour and orange rind and mix together well. Fill mini or regular muffin pans, 2/3 full and bake for 12-17 minutes or until light golden. Remove from oven.

Combine 1 cup brown sugar with the juice from the two oranges. Stir together, and drizzle over warm muffins. remove from pans immediately and eat warm! Mmmm!

Homemade Oreo Cookies + a CRAZY day!

So I had some time this morning before my day went CRAZY to make some Oreo Cookies..Homemade that is..with Cream Cheese Frosting! I made them up at the ranch the last week I was up there and there were about 30 of them and like 20 minutes later there were maybe 2 left! Yay there a hit! So I decided to try Carrot Cake and Cherry Chip as well, and just them without the frosting are even good! It's a cheap, easy way to make some VERY flavorful YUMMY cookies! The recipe is very simple and I had fun taking some pictures!

Homemade Oreo Cream Cheese Cookies

1 box chocolate cake mix
3/4 c. butter flavor crisco or 1/2 c. crisco & 1/4 c. butter
2 eggs
2 TBsp. water
Cream Cheese Frosting

Mix all ingredients together
Roll into balls and place on ungreased cookie sheet
Back at 350 degress for 10 min
Cool, then put on the frosting!
It's that amazingly simple!







Cream Cheese Frosting
(Betty Crocker Cookbook)
1 8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 tsp. vanilaa
5 to 6 cups sifted powdered sugar


Beat cream cheese, butter and vanilla with electric mixer until light and fluffy. Gradually add 2 cups of powdered sugar, beating well. Gradually beat in additional powdered sugar to reach spreading consistency.


So I finished these around, let's say noonish, I get a call from my parent's wanting to go to lunch so i'm getting the ready to head out the door and the vet calls FINALLY and so I had to rush out there on a tank full of NO gas, and found out Buddy is just really sore and his muscles are inflammed so we have to give him medicine to make the swelling go down and then if it hasn't in the next four days then we have to call the vet. Here's the kicker, so he didn't have to stuff that we needed to give him, and well he told us to drive out the St. Anthony to go and get it..so ok, I drive to the shop to go tell my dad, we head out, my mom and I, stop and get some Taco Bell cause i'm starved...those cookies didn't do me anything..:) So we're heading down the road going the way they secretary gave us directions, but this lady seriously didn't give good directions at all! She said we're across from the golf course on the left............ok so we go to the golf course, calling around to find where it is first for about 20 minutes and then we find it when finally someone tells us where it's at and we go along and and low and behold there is no veternairy clinic on the left...it was on the opposite side of the freeway on the left! Fabulous! Could of told us that lady!!!!!!! Man oh Man that was fun...then we rushed back went and gave him his shot and now i'm home and free...well sorta but at least I get to go and see Traveling Pants with my mom and friend Karlee tonight! YAY! So ya, crazy day..tomorrow will be better hopefully.....I'll just go have a cookie and milk and take a break for a bit! That will do me some good...lol


I'm Catchin' Up!

Ok I know, I said I would be writing a TON more..and well..life got crazier AFTER work..but things are slowing down I promise. This weekend was way fun and I'll have to share some pictures with you once I finally catch up! Although on saturday we went out to check on my horse Buddy and his leg was swallon all the way down so that's been a little crazy latley figuring out what's wrong..oh and the weather here has been cold windy and rainy so my horses are probably thinking where the heck did you take us and where is out super nice barn..oh which is done here by the way but we just need power and water and then we're going to move them! So anyways this picture pretty much sums up the last few weeks and months since my b-day..there all full of surprises ever turn I take! I'll be back hopefully tonight! I gotta take Buddy to the vet, oh and make some homemade oreo's...don't worry i'll share them with you..oh the list is neverending..i need a creative juice jar like my Sis's! Talk to ya soon!

It's Been CRAZY!

So, basically life has been way more crazy then I really thought it was going to get! The Ranch really took over a lot of time this summer and I'm excited to say this next Thursday will be my VERY LAST DAY! YAY! It's great to see the end So much closer then it was! I'm more excited because now I'll finally have this chance to really focus on ME! I won't lie the last few months have been probably some of the hardest that I think I have gone in life. Making decisions really that will affect overall the happiness in my life forever. I've said a lot of "Good Bye's" to a lot of different people and things also in my life that I didn't want to and that I did want to. I've felt like in the last few weeks I've grown so much. But there is a lot of people that I have to thank for showing me what there is worth fighting for in this life to be happy and for what I should see in my future. I will admit I was kind of walking with a thin vellum type veil over my face, thinking that I saw everything perfectly, although I wasn't. I had some amazing examples from people whom I will Forever be greatful for. They will always have a special place in my heart for all that they have done, or said or even just gave of there time to spend with me. They don't know who they are, and I know someday they will. I've tried my best to let them know, but I don't think they really do know untill they are ready to know! So back to a good happy note, I'll be writing on her much more! I've had so many amazing experiences that last few months as well as just this past week that there is no way that they are going to go unknown about by others! As well, I've been at education week the last few days and have gotten many many books and then have written probably 5o pages of notes from some amazing lessons! I've also just had some great experiences with just my own testimony growing in ways I never thought it would and strengthing by some awesome things! I can't wait to share them all with you! If you know me and have been in my life lately you know how crazy it really has been and how I have had to make some of toughest decisions..and don't worry they are still aren't over! YAY! But get ready also, i've been collecting some pretty amazing recipes and books and magazines that are going to make you drool and if I can perfect my skill of food picture taking then you will die to make what I show before you! :) Oh and as well thousands of pictures from this summer that I have yet to post also! If will be a little crazy for a while but It will also be fun for me to recap on all of it as well! I hope my memories and stories and life experiences touch someone as they have touched me! Isn't this Glorious?!














So I thought I would take a blog and just share some pictures! I don't really have have a lot of time to right about my week today but I thought I would share some pictures of the last few days and the great fun that we had! The views from the rides are amazing! This is one of the rides that I went on, on friday with the guests and then later that night Dallas and I had fun next to the fire with the pups! We were way tired as you can tell in one of the photo's! Although later that night we started roping and let me tell ya, I wish I could have gotten it on tape! It was hilarious! Maybe I'll be lucky next week and I'll have a video for you! Then there's a bonfire not "bombfire" that we went to on the ranch on Saturday night and dallas and I both had rips in our pants but on oppposite sides so we thought we would take a shot of it! Then there's a pic of some of our girls from the Branch that showed up! All in all is was a really fun week! I had some really good girl heart to hearts with some of the other workers and learned a lot about myself this week! I had some awkward situations with some boys, but they were easy to get out of, and then I had a ton of fun with the guests that stayed as well, so the whole week really balanced out! This next week is going to be fun! We have 17 guests and 10 of them are kids so its going to be a crazy ride this week! So be prepared for some more fun pictures, that is if I get anytime to whip it out and snap a few!

Happiness, Friendship, and Hope

Something to do, Something to Love and Something to Hope For! Do we all have those three things? Do we all have something to do? If you answer that no, your wrong, we all having something in this life, day to day we have to do. It may not be fun, it may not be important, or it may be great, but not matter what we usually have something to do! In my case I have something to do everyday, all day with this job! There's never a dull moment, and trust me some times I wish there was! I'm not gonna lie i've snuck in a short nap or two!;) But all in all, i'm extremely busy from sun up to sun down and when my head it's the pillow everynight after studying my scriptures and learning something new from them that inspires me to look forward to the next day, and pray to our father in heaven for the strength to go on to the next day, and thank him from all of the many blessings, and thank him for the things I have been given to do I am happy!
Then we ask they question do we have something or someone to love? We all have passions, hobbies, significant others, crushes, animals, family, this beautiful world, we all have something we have once loved, and still love! I could probably have a list several pages long of things I love or have loved! Most of us love someone else, and we give that love to them because it makes us happy, and we do those things we love, because it makes us happy. Without love, there couldn't be happiness.
Then theres something to hope for, now, I have hope, without hope we couldn't have faith right? Hope brings in faith, and when we have hope, and we believe and trust that what we hope for will come true, the way it should come true we are happy right? At least I hope so! I've hoped for many things, and still do, more then ever now I believe and that without this hope that I have for many different things in my life I wouldnt have happiness. If we couldn't hope, life would be so pointless right? So, I'm thankful for hope, and what it brings to all of our lives. Always have hope!


Ok ok, so on to my fun and crazy week i've had up at the ranch! I know it's been two weeks but I did right a post on youtube with a song and well it didn't post and well, i'm kinda sad cause it was amazing! But, maybe it just wansn't suppose to be read!

So this week we have been getting the ranch ready for the guests to come! I know you probably want to see what it looks like and I haven't taken any pictures yet because well, its muddy and rainy and hence the random stuff were doing in these pictures! But soon I promise! As far as work, well it hasn't been that bad! No fence building so far! YES! Well I kinda got out of it with a little experience this last thursday!

So...here's the story......We were planning to have a bunch of friends from the branch to come up and have a bomb fire before all the guest start arriving and dallas and I had planned to bbq chicken and made potatoe wedges and pasta and green beans....Yum! and it was smelling soooo good, and everything was pretty much ready and then Elisabeth calls, one of the girls I work with and Natalie, from home and who's working with me as well, and they said they need some help moving some cattle so I go ask Heidi, who runs to go, and then Elisabeth calls again, and needs me....so I go and then get out there and I was like WOW we need horses, this is way to many cattle and way to much ground to cover on our own! So I call Dallas and she catches two horses, saddles em up and rides out. Then I get a call from one of the guys that's coming out Blaine and asks if we need help so him and a couple other people drive out and by that time we have the cattle in but we have a few straglers so Dallas tells me to hop up on A.J one of the horses and we'll go get them. So all our friends are watching and I get ready to get on and tell em to meet us back firepit! So i'm walking along and decide to take of and kick him and oh my bad bad bad idea! I went for a little bronco ride i'll tell you what! I think that I might not be able to have children and I need to ride with a neck brace so that I don't get whiplash agian! Yeah, it was embarrassing. I stayed on for 6 or 7 pretty good bucks, but that was probably because my foot was caught in the sturrip and well, i couldnt exactly get off until it cam unstuck, which I have no idea how it did, but Im so thankful cause that horse didn't stop bucking for like 4 minutes! Oh man! fun stuff! Although I did get back on! That's how true cowgirls do it! Then we got the cows, had or bonfire, went to bed and yeah I took the next day off, i was a little sore and couldn't do anything so I came down to rexburg and spent the day with my mom and it was fun!


So, then this weekend I was able to go 4-wheeling with a bunch of friends and oh my goodness, so much fun! It was true blue 4-wheeling and i've never had so much fun on a 4-wheeling before and I hope we get more chances to go out and do it agian! We roasted hot dogs over the fire and had smores, it was a great relaxing day! We also got to do a service project with our branch planting pine trees up in Swan Valley for a couple hours and that was a blast as well! Being in nature it so amazing. The feelings of peacefulness and the revelations you can get from them is amazing! Whenever you get a chance to be out there go and so it! Just spend a couple minutes just to relax and think about all that you've been given and pray to heavenly father and im positive it will be no matter what a great experience! I love it and i'm so thankful that I can have everyday to wake up and be outside, riding horses, fixing fence, meeting new people, and working with great people in nature, in some of the beautiful country around! I don't know what I would be doing right now if I didn't have this job, but all I know is that this job no matter what as already changed me! Im looking forward to many more experiences and i'm sure that will happen fast! I hope everyone else has had a fun week and has been able to feel happiness in there lives. If you ever get down, go find a rope swing and swing around, or feed a baby calf, or go out for a night with your friends, i'm sure it will bring nothing but happiness to your lfie!

Life Changing Experiences

So, I'm sorry it's been more then a month since i've written, SOO much has happened and i've been extremely busy! I've started a new job up in Swan Valley area working at a Guest Ranch and oh man can I tell you, it is not what I thought it was going to be. I mean, I've worked on a guest ranch before, but this one is a whole different story! That last ranch I worked at, well let's just say it was a bit more luxurious then this one. This is a true blue working cattle ranch, that hasn't been remodled for a while, but all in all it gives it a ton of character and really this summer would not be as fun and as meaningful if It wasn't like this. We haven't really cleaned anything up yet, but thats what the plan is to do this week. I'm moving up there tomorrow with one of the girls that is working with me and also one of my best friends Dallas! We are super excited and hopefully it will be a different feeling once we are working up there.

So funny, crazy things have happened since I have been working, let me tell ya! So I thought we would be doing some cleaning and cooking and riding, but OH NO my friends, we are talking hard core cowgirl work! We are putting stock yards together (for those of you who don't know what that is, it's a huge pen made of up wood, to make a pen that is more then 5 feet tall so that the cows can jump in because thats where they stock there hay) yeah we built two of them and theres probably a couple more to come this summer..then we've built some more fence, and I'm talking barbwire thrashed, ruined, torn, wow horrible looking fence, yeah we we have redid all of it and pretty much I am a not perfect but getting there splicer (if you don't know what this is, well it means tightening the fence and making it stronger! or just look it up, it's complicated, you should of seen my face when they told me "hey, go splice that fence over there, it's looking thrashed" (one of our new words is "thrashed") ) So after we build fence, yeah we build more.....then we clean....then we build fence....they we get to ride horses to build fence...then clean...lol ok yeah I know it's getting to sound pretty boring, but its not boring its HARD, hard hard work! But at the end of the day I feel like so much progress has happened..well besides today because yesterday was an adventure for me. Here's how it went:

I went to work at 8 in the morning, I know not so early, and well none of the girls where they are the house in ririe so it was just me and Sam, the owners son. We undid all this stuff on a tractor and then loaded a truck up for one of the other guys to take up to the ranch to start planting the feilds, and then Carl, the owner, came and asked us to sort and find some cattle. Well I was like easy enough...well this ranch uses four wheelers to catch cattle (hence the photo of me on the four wheeler on one of the mornings Blue and I were gathering cattle)! Yeah I thought we would use horses, but um, nope, it's cheaper to use 4-wheelers! lol. So yeah we gathered some cows that where lose, seperated the pairs (momma cow and calf) and then the odd ones left in another pen cause we had to do pregnancy checks on the rest. So after we seperated we took a lunch break cause it was like 90 degrees, and then came back out and the vet came and we did preg checks. Well this ranch is pretty run down k, so the shoot and alley way are pretty thrashed. But it worked! So I got in charge of writting with chalk on the cows how far along they were or if they were open (which means they don't have a calf or the vet couldnt tell) so yeah by the end of that I had red, yellow, green and orange chalk in my hair on my face, on my shirt my boots idk how and all over my pants and arms, pretty much I looked like i've never played with chalk and I had a good ol' time! Then after that tramatic incident we had to seperate the calfs from there mothers to brand, tag, vaccinate, clip! Oh Boy! That was fun, I smelt like burnt hair and cow manure all up my arms, YUM! getting a great visual aren't ya!:) Well, I could have gone into more detail but that day of work was fun! I ran home and took a shower and went with some friends from church to a multi branch singles ward FHE, and it was a blast! We had hamburgers, talked, laughed and then played ultimate frisbee for two hours, that why today, well I was extremely tired and sore! WOW...but, I love it! I love this life! When I do it on my own well, it will be run a little differently, but still I dont mind it one bit! I L O V E it! :)

So life has been pretty good, there's not much for me to complain about! I'm pretty sure I will be able to get on once a week and let everyone know what's going on! I'll give a run down and stuff! I have been taking a few pictures but none of the ranch yet so once I get some taken i'll be sure to post them all! as for the others they'll come along when I feel like going back through the month! As for know just know i'm working my little butt off and learning how to be a rough and tough cowgirl!

My Journey With "Top Notch"

Today, as a matter of fact since I have gotten no sleep since monday morning, I worked on this paper scrapbook for my Animal Handeling class I am taking, which by the way I LOVE! Just a quick overview...we where asigned a horse at the beginning of the semester that only we were aloud to work with and teach the Parelli progrom too. (Pat Parelli) You probably have only heard of him if your a horse fanatic like me! Well since this is the last week of the semester and we've been working with our horses, mine is "Top Notch" A 4 year old grey Thoroughbred mix, we had to do a final project explaining what we learned about all the techniques, principles, games, our horse, and ourselves. So, He told us to be creative, do something your good at to teach somone what you have learned and I thought whats not better then scrapbooking! I don't get to do it at ALL when i'm here at school and the chance to do it for a class was extrememly exciting. But, here's the down side. I didn't decide that I was going to do the scrapbook until yesterday, well today still for me! So I took pictures in the morning, with the lovely help of my mom, and then went and devoloped the pictures, then went and got some scrapbooking stuff, not mentioning how much I spent on my little college budget, but when you buy scrapbook stuff, you got to get the cutest right!!? Well, I started at 7pm and finished at 6am...never stopped, just kept on kept on! Then took a shower headed to my first class at 7:45am then came home ate, went to my class at 11:30, turned in my final, did my riding final, ate, took a 3 hour nap, and now I'm here agian, should be sleeping, but don't want to be up at the crack of dawn!

So long story short, this was soooo much fun although it took a long time! I love scrapbooking Horse stuff, (my favorite is lovey stuff, but this will do) and so I had a fun time writting about all my experiences with him and looking back at all the good memories I have had. Now I will have this book to look back on and remember the great success I had in this class and with this horse. It gave me motivation to continue with the passion that I have to train horses, it gave me a better understanding, and now I have more knowledge and confidence! What Heaven Sees in You

I've been downloading church music, browsing and searching for songs to listen to on sunday's and days that I am feel heavy burden or just times that I need that comfort from words and music that uplifts me. There is something about music that touches me. Anyone around me will see and know that I relate my life a lot to music. Well, it's explainable because it's other peoples lives that people are singing about! But, this perticular song hit me. I watched the video, and sat and cried. They werent those tears I have had weeks past of fear and sorrow, they are now tears of Joy, Courage, and Excitment. They were tears of love, for myself and especially for my Lord and Savior. I have taken many things for granite in my life, one the church and how much it can really bless me. It's always been there, just not in my heart. I haven't felt capapable of the blessings, but now I am and now and do. Life throws us in directions and paths we do not want to go down at first, and some we should have never gone down, but we learn from our trials, and our faith grows when we learn and come out strong. I want to be that girl in the end of the song, wearing that white dress for the third time. Pure and Holy, Sent from heaven to prove myself worthy. I strive for that day I get to go into the temple and marry for eternity to the one that I am to share this life with. I know that I am capapable of this, and that when that day comes, my heart will be overjoyed and that I then too will feel blessed. I still do feel blessed, that my life has turned around the way that it has! I hope that any women or girls that listen and watch this that they will see what heaven see's in them. That all of us will know we are Daughters of God, Children of God, who loves us, wants us to return to him someday, and will never ever leave us.

Sunday Morning Blueberry Muffins

This morning my mother and I where able to watch the first session of conference and then bake some muffins. She made some from a box, and I made some from scratch! Well, they aren't from scratch, they are a recipe that I saw on one of the daily recipe blogs I go to daily. http://simpledailyrecipes.com/ She made this really delicious looking Healthy Blueberry muffins, and well I thought why don't I try it out. I've never made muffins from scratch before, and believe it or not they turned out really good! My family enjoyed them as well. They only made twelve and I made them an hour ago and I believe there two left! I thought I would start posting all the fun things I make at home on my own or with my family. Also how I tweek some recipes by cooks or other people I enjoy making recipes from, or tell you horror stories, or just success and delicious scrumptous recipes! So here's my first, I hope you enjoy my pictures, I am not the best photographer, but I believe I'll learn how to capture food better as I go along. I will be back later tonight to share a few more things, mostly because I have been gone for a week! There's alot going on and why not share it all!

First here are the ingredients!


3/4 cups low fat milk
1/2 cup natural applesauce
1/4 cup healthy egg substitute or 1 egg
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup fresh blueberries




I started with two different bowls, one too mix the wet ingredients (Milk, Applesause, Egg) and then a second to mix the dry ingredients (Flour, Baking Powder, Salt and Sugar) Then make a well in the dry ingredients and add the wet ingredients. Stir until flour is mixed in. It should be lumpy!




Then add the blueberries. Fold in until incorporated into the dough!





Add by spoonfools into a greased muffin pan!




Bake at 400 Degrees for 18-20 minutes. I only cooked mine for 15 minutes and they were perfect! I am in higher altitude so that would most likley be why! As soon as they are done take them out of the pan and let them cool, then devour them!
